I'm trying to eat only rice & beans for a while, no April Fools. The month of March, Rice & Beans month sparked my motivation.
(Next I plan on giving up my showers.)
The cool thing is:
1. Wherever you are, whether it's a simple meal of bread & wine, rice & beans, or a feast of meat & potatoes--gathering together and eating food with people is somehow very magical.2. Today I ate only white rice & black beans, no salt or butter. With a glass of water. This makes me look forward to dashing some salt on my food, or adding a few vegetables to tomorrow's meal. Simple pleasures.
Just kidding about showering, I plan on still doing that.

ReplyDeleteI used to eat rice every day... when I lived at home. Chamorro (which is what my mom is, the native people of Guam) food is typically meat and rice. But I've developed more of a taste for rice and vegetables with my age. I'll be interested to see updates about your rice & beans diet. Be careful, don't want you to develop kwashiorkor.
ReplyDeleteBrian, my parents know that I'm choosing to eat rice & beans for a month. I think they understand the reasons, and I'm grateful to have their support.
ReplyDeleteAnd no worries, I'm eating certain fruits, vegetables, and soy milk along with my meals--I'm not completely deprived of nutrients.
Emma, I love rice and enjoy eating it for breakfast, haha. Thanks for lookin' out for me. I'll try to post an update once in a while.
